As we mentioned in our recipe for champagne lamb, champagne has been used in cooking for a very long time. It is used for marinades or sauces, whether it's for meat or fish.

The same goes for crustaceans. There are countless recipes for lobster with champagne emulsion, langoustine on champagne sabayon, or casserole dishes of crustaceans with champagne.

Champagne has two uses in cooking. The first is to flavor the sauces that will accompany the fish. You can choose slightly fruity wines like our De Lozey Blanc de Blancs champagne.

In this lobster with champagne recipe, we will use champagne in two ways. The first is to create a marinade using champagne. For the marinade, we can use our 100% Chardonnay Blanc de Blancs champagne, which will add citrus notes to the marinade. The second is to create a creamy sauce using our De Lozey Brut Tradition champagne.

  • Preparation time: 30 minutes
  • Marinade preparation time: at least 2 hours in the fridge

Ingredients

  • 3 lobsters
  • 300g of mushrooms
  • 150g of chopped shallots
  • 60cl of fish stock
  • 40cl of brut champagne
  • 70g of liquid cream
  • 15g of cornstarch
  • 1 lemon juice
  • Dill
  • Pepper
  • Salt

Preparation

For the sauce preparation

Prepare the fish stock by mixing 3 tablespoons of dehydrated stock with 15cl of water and bring to a boil. Add 25g of sliced butter, champagne, cream, pepper, garlic, and shallots. Reduce by half.

Marinade preparation

In a container, prepare a marinade with some of the shallots, lemon juice, 20cl of champagne, and dill. Dip the lobster in it and let it marinate for at least 2 hours.

In another saucepan, melt 25g of butter with the flour. Pour in the previous sauce and bring to a boil for 2 minutes while stirring constantly. Then set aside.

  1. Cut the lobsters into sections.
  2. Finely chop the mushrooms, shallots, and ham, season with salt and pepper, and moisten with champagne. Let it marinate for at least 2 hours in the refrigerator.
  3. Strain and reserve the champagne.
  4. Sear the lobster sections on all sides. Add champagne and fish stock. Simmer for 20 minutes.
  5. Remove the lobster sections from the pot and keep them warm.
  6. Dissolve the cornstarch in the cream and pour it into the cooking juice. Let it thicken over very low heat.
  7. Cover the lobster with the sauce and serve immediately.
